KAI Shun — Chinese Cleaver is the perfect chef's knife for your vegetables with a very tall blade and characteristic square profile making it very popular among Chinese Chef's. This high-quality kitchen knife blade is manufactured from VG max steel composite comprising of 32 layers and finished with a semi-gloss Damascus pattern desired by many professional chefs.
The Chinese Chef Knife forms part of the KAI Shun classic range, like all the kitchen knives in this range you can expect quality materials used throughout handmade in Seki City Japan.
KAI Shun Classic Chinese Chef Knife Specification
The D-Shaped handle provides comfort. Made from black PakkaWood and impregnated with a thermosetting resin for ultimate durability.
Double bevel blade with a Rockwell Hardness of 60-61 offering fantastic edge retention expected of a high-performance blade.
The full-tang design also offers greater strength and balance.
KAI Shun Classic Knife Use
- Cut on wooden cutting boards, rubber or plastic avoiding glass, metal and stone surfaces.- Avoid bone and frozen foods
Knife Maintenance
- When the honing rod can no longer bring the sharpness back to the blade edge sharpen with whetstones for best results.
Knife Care
-Shun Classic Series should be hand washed with warm soapy water and dried with a tea towel- Protect the blade by storing appropriately, Avoid storing in unsecured knife drawer where the knife is liable to rattle against other knives and utensils, potential chipping the blade edge in the process.
