From the blade to the handle, this Miyabi Santoku knife from the 5000MCD series is unique. The natural structure of the Masur birch used in the knife handle gives the knife a distinctive appearance, whilst the fine damask structure of the blade is reminiscent of the swords from Japanese stories with100 layers of steel surrounding a core of MicroCarbide MC63 powder steel.
The classic Japanese Honbazuke trigger makes the knife edge particularly sharp. Even in the 21st century, this relatively complex process consisting of several grinding passes is still performed by hand to obtain an authentic result.
- Blade core made of MicroCarbide MC63 powder steel embedded in 100 layers of steel for exceptional hardness of approx. 63 Rockwell (international standard unit of measurement for hardness) and outstanding cutting edge retention.
- CRYODUR® ice-hardened blades provide particularly good cutting edge retention, corrosion resistance and optimum blade flexibility.
